Happy Monday!! I have just three days of class left 😳
Last night I added $220 of cash/venmo from my Proteus fundraiser and March madness bracket (whoops... little late) to my fundraising page. That extra $220 brings our total to nearly $5,600! And if you remember, that means today is BEAN DAY! I love beans and usually eat at least 1-2 cups every day so even though it's a little strange, I didn't think this would be too bad when I first proposed the incentive. However, I've already had one can of beans (red kidney) for breakfast and it was honestly not very enjoyable. I just went in for some pinto beans, and man, they were pretty bad 😂
I've gotten pretty creative in the kitchen recently and love to make cool new dishes (last night I made some fantastic oven-roasted brussel sprouts), but many of my meals are still very simple: sometimes just beans, rice, and some spices... sometimes just beans and spices! But I never realized just how crucial the other flavors were. I'm committed now though, so no turning back. The last thing I need is to skimp out on calories but I'm not sure how many cans I can endure (at roughly 300-400 calories per can, I'd need to eat 6 just to make it to 2,000 calories) so today might end up being a bit of a fast as well lol. Should've done another banana day 😞
In other news, before writing this I finished another final paper! Gonna go back and proofread it after I post this and submit it. That'll leave me with one more paper/project and a lab practical tomorrow and then I just have to get through finals :)
